Titlar såsom ”Scientists Uncover the Secrets Behind Champagne’s Bubbles”, ”The Secrets of Fizz in Champagne Wines: A Phenomenological Study”, ”Recent advances in the science of champagne bubbles”, ”Science of champagne bubbles explained”, ”Bubbles and Flow Patterns in Champagne” etc., dyker upp med något års mellanrum och nu senast artikeln ”How Many Bubbles in Your Glass of Bubbly?” från april i år. Dessutom så verkar samma team, med en Gérard Liger-Belair i spetsen, ligga bakom de flesta artiklarna. Men har man inget annat för sig så kan man alltid forska och varför då inte om ”moussen” (tja! kolsyrebubblorna alltså) i Champagne…
Tidigare har olika beräkningar kommit fram till att ett glas champagne skulle innehålla (eg. bilda) 15 miljoner bubblor. Nu har ny forskning, där man i beräkningar tagit hänsyn till temperatur, ”bubbeldynamik”, formen på ett typiskt champagneglas mm, kommit fram till den mer blygsamma siffran 1 miljon bubblor.
”The whole number of bubbles likely to form in a single glass is the result of the fine interplay between dissolved CO2, tiny gas pockets trapped within particles acting as bubble nucleation sites, and ascending bubble dynamics. Based on theoretical models combining ascending bubble dynamics and mass transfer equations, the falsely naı̈ve question of how many bubbles are likely to form per glass is discussed in the present work. A theoretical relationship is derived, which provides the whole number of bubbles likely to form per glass, depending on various parameters of both the wine and the glass itself.”
